Chiayi is where Alishan is located, and Alishan is where tea plantations can be found, Alishan is also where the indigenous Tsou tribe inhabit. Close to the Tropic of Cancer, the high mountains of Alishan are frequently shrouded in thick clouds. This creates a cool, moist climate which reduces the level of bitter chemical components (catechins) in tea leaves, while increasing levels of theanine and soluble nitrogen which makes the tea taste sweet.
